Thai Pork Omelette with Spinach


This one is super easy and it is also one of Raiden’s favorite. It’s a one pot dish loaded with super foods that will make for a wholesome meal.

When Raiden goes to daycare he doesn’t get to eat his egg in the mornings. So, I feel like he’s missing out on one of the essential foods in his diet. So we make omelette for dinner 🙂 This might seem weird to eat an omelette for dinner but it’s a very common thing in Thailand. You can order this omelette at any of the local restaurants and it is a very popular item with the street vendors as well. It’s actually one of the most beloved dishes that Thai people like to order when enjoying a family dinner of curries, fish and rice.

We load ours up with spinach or kale. When we grow kale in our vegetable garden in the summer Raiden likes to help pick out the kale. Then he gets to wash it and add it to his omelette. This way he gets to contribute and help in the process which gets him ever so excited to try it. Then BOOM you have a weeknight 10 minute meal for the kids with all the essentials like EGGS, MEAT and VEGETABLES. This one is a popular and essential REPEAT menu item in our house every week.

Pork

60 g of ground pork
1/2 tsp Seasoning sauce
1/2 tsp Mushroom sauce
1/2 tsp Oyster Sauce
1/2 tsp Thin soy sauce (optional)
Pinch of sugar
1 tsp fried garlic (optional but highly recommended)

Sauce

Eggs

4 eggs
2 cups of spinach
half onion, slice
1/2 tsp seasoning sauce (if you don’t use light soy sauce put 1tsp of seasoning sauce)
1/2 tsp mushroom sauce
1/2 tsp oyster sauce
1 tsp light soy sauce (optional)
1/2 tsp sugar

Instructions

1. In a bowl, mix the pork and all the sauce (light soy sauce, oyster sauce, mushroom sauce ), sugar and roasted garlic.
2. In a new bowl, mix all the egg with onion, spinach, light soy sauce, oyster sauce, mushroom sauce and sugar.
3. In large non-stick pan, drizzle in some some vegetable oil and turn up the heat to medium high. Add the seasoned pork and cook for 1-2 minutes until the pork is 80% cooked.
4. Next, add in the egg mixture. Tilt the pan and spread the egg evenly through the pan.
5. Flip the egg when the bottom is golden brown.
6. Cook for another minute or, until there is no uncooked egg left.

Serve hot with warm jasmine rice, enjoy!
