Dutch Baby Pancake (fool-proof)


Tired of regular pancakes & waffles? Try this Super Quick Dutch baby recipe I like to make for the kids on the weekends while they finish watching their morning cartoons. You can just whip it up quick in the blender and pooof 20 minutes later you get a super puffy pancake breakfast for the whole family to enjoy.

Ingredients

3 tbsp butter
3 eggs
3/4 cup all-purpose flour
3/4 cup milk, heated 20 to 30 seconds in the microwave
1 tbsp sugar
2 tsp vanilla extract
Pinch of salt
Icing sugar for dusting
4-5 Strawberries

Directions

1. Preheat the over to 400° F.
2. Put the butter in a 10″ Cast Iron Pan and place in the oven.
3. While the butter is melting, combine eggs, warm milk, flour, sugar, vanilla and salt in a blender. Blend on medium-high until smooth.
4. Carefully remove the hot pan from the oven. Swirl the butter until the pan is coated completely, then pour the remaining butter into the blender and pulse to blend.
5. Pour the batter into the hot pan and return the pan to the oven.
6. Cook until pancake is puffed up and golden brown along the edges. Approximately 20-25 minutes.
7. If you are not going to serve it right away. You can remove the whole Dutch baby from the pan by using a spatula, and place on a cooling rack to allow steam to escape. Doing this will prevent it from getting soggy.

Note: I usually serve it right away with the cast iron pan. Be careful not to touch the pan. (trust me when I say we learnt it the hard way) Dust with icing sugar and cut pancake into wedges then place sliced strawberries. You can drizzle it with maple syrup and ENJOY!!!!!!!!!!!!!!!!!!
