Fried Rice

It’s the ultimate Asian quick meal to whip up. My kids love this and it’s an easy one-pot meal that takes less than 15 minutes to make.

The main trick here is to use a day old rice or even a few days old works well. I usually make this when I have some rice sitting in the fridge that we had from the day before. I usually plan ahead and make sure I will have some leftover rice for the next day. DO NOT USE freshly made rice, the fried rice will just end up becoming mushy and soggy.

I like to make my fried rice in a WOK to get that nice smokey taste. It just adds that extra flavor to your fried rice. The ingredients to the fried rice is infinite. You can add any protein you might have on hand and add any veggies you like. My son likes hot dogs in his fried rice so I cut it up into slices and throw it in there. I usually add peas and carrots for some veggies.

Ingredients

3 cups of Day old Jasmine Rice
1/2 cup Diced onion
1 Minced green onion
3 tbsp Healthy Boy Brand Thin Soy Sauces (if you like fish sauce you can mix that in)
1/2 tsp sugar
3 eggs
3 tbsp Vegetable oil
1 tsp Nguan Soon Thai curry powder
1 Smokies
1 Lime
1 Tomatoes

Directions

1. In a pan or wok if you have one, add some oil and turn the heat to medium high.
2. Crack 3 eggs in a bowl first (it will be easier to pour into the wok instead of individually) because we are cooking on a fairly high heat. This way you are not waiting to crack the eggs one at a time.
3. With a ladle quickly sauté the eggs until smooth.
4. Next, add in the rice and coat them with the eggs, make sure that rice is no longer sticking together. (You can also break up the rice beforehand to save time).
5. Add in light soy sauce, sugar. Sauté for 2-3 minutes.
6. Add in diced onions and smokies, sauté until onion is soft.
7. Add in curry powder. Sauté for another minute.
8. Lastly, add in the green onions
9. Garnish with cilantro & tomatoes. Enjoy !
