If you are looking for delicious comfort food look no further than pad see ew. It is one of those foods you can never go wrong with, always delicious and always satisfying.

If you want to explore Asian food and expand your palette pad see eww is a pretty good introductory entrée to Thai food. It doesn’t have a distinct or strong flavor like the Thai curries so it’s enjoyable even if you don’t like curries or have a sophisticated palette.

We travelled to Thailand with my Canadian brother about 7 years ago. He is not the most adventurous person with food but he lived on pad see ew and mango sticky rice when we were there.

Ingredients

This recipe make 4-5 servings
1 pack of flat rice noodle roughly 900 g (TIP: noodle is best cooked at room temperature)
6-7 gailan jr.
1/2 onion (slice)
180g shrimp (you can substitute this with any protein you like eg. pork or chicken, marinate will be the same)
1 clove of garlic
3 eggs
3 tbsp Oyster sauce
1/2 tbsp Black Soy Sauce
1 tsp sugar
1 tbsp Light soy sauce
1 tsp Light soy sauce (for the egg)
1/2 tbsp Light soy sauce (shrimp marinate)

Instructions

1. Mince 1 clove of garlic and put it in a bowl with Shrimp and 1/2 tbsp of light soy sauce and leave it for 10 minutes
2. Slice half of the onion. Slice gailan jr. to about 1.5 inches in length.
3. In a wok or a large skillet heat up some oil on a medium high heat
4. Once the wok is hot put shrimp in and cook until about 90% cook then remove from heat and set it aside. This way we won’t over cook the shrimp.

5. Add a little more oil to the wok and heat it up over medium high heat, add in onion and sauté until onion is light brown. Add in 3 eggs and scramble it, season the eggs with 1/2 tsp of light soy sauce
6. Once the egg is almost cooked add in gailan and stir fry it for 2-3 minutes.
7. Add in all the rice noodle, oyster sauce, black soy sauce, light soy sauce and sugar

8. Gently stir fry all the ingredients together until everything is evenly coated then add in the shrimp that you have cooked previously. Add in more vegetable oil if needed.
9. Stir fry for 2-3 more minutes over medium heat
10. Serve warm with some fresh green onion on top.

In Thailand we usually serve this with some pickled chili in vinegar
